A Quick Look Back – Quick N’ Easy Cooking

Looking back at January, Quick N’ Easy Cooking had it’s first event of the year! When thinking of what to cook, we wanted to to make something that is healthy and enjoyable.

So here we provide you all with a recipe that’s tasty and also good for your liver, done by Gordon Ramsay, Spiced Tuna Fishcakes!

You will need canned tuna, water chestnuts, ginger, green onions, cilantro, red chili, lime leaves, salt, pepper, fish sauce, eggs, sugar, rice wine vinegar, and lime juice.

First, you will want to drain the tuna and grab a bowl to put the tuna in. Then slice your water chestnuts and grate your ginger on top. Slice your green onion and chili. Chop both your chili and lime leaves and put that into the bowl. Add salt and pepper to the bowl and lightly season with some fish sauce. Whisk two eggs and add your eggs into the bowl and mix.

Now, you want to roll the mixture into a ball and pat them down slightly. Turn on the heat on your stove, get your pan, add oil and when hot place your fish cakes in until a golden brown on both sides.

Lastly, a dipping sauce to lift your cakes to the next level. Add a pinch of sugar into a bowl, two tablespoons of fish sauce, one table spoon of rice wine vinegar, some lime juice, some cilantro and mix. And you’re done! Quick and easy!
